Chopped BLT Sandwich
A perfect use for those garden-fresh tomatoes, this Chopped BLT Sandwich has all the wonderful flavors of a classic Bacon-Lettuce-Tomato sandwich, chopped and loaded on a toasty hoagie bun.

- Large mixing bowl

Ingredients
- 12 ounces thick-cut bacon
- 1 heart romaine chopped
- 2 small tomatoes chopped
- 3 tablespoon mayonnaise
- 4 hoagie rolls
Instructions
- Line a large, rimmed sheet pan with aluminum foil. Arrange the bacon slices on the foil-covered pan and place in a cold oven. Turn the oven on to 425oF and cook for 15-18 minutes, or to your liking.
- While bacon is cooking, combine chopped lettuce, chopped tomato, and mayonnaise in a large bowl. Toss to coat.
- Once the bacon is cooked, remove to a plate lined with paper towels to drain the grease. Coarsely chop the bacon and add to the mixing bowl. Toss again to coat.
- Turn oven up to broil (450-500°F). Arrange the hoagie rolls, cut side up, on baking sheet. Toast under broiler for 1-3 minutes, watching them closely to avoid overbrowning.
- Evenly divide BLT mixture among the toasted rolls and enjoy immediately.
