Ingredients
- 1½ cups water
- 5 tablespoons butter, divided
- 1 package (6 ounce) chicken stuffing mix
- 1 medium onion, diced
- 1 can (10.5 ounce) low-sodium cream of chicken soup
- ½ can (10.5 ounce) low-sodium cream of mushroom soup
- 8 ounces sour cream
- 1 whole cooked rotisserie chicken, skinned, boned and meat shredded ( about 4 cups)
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat oven to 375°F. Spray 13x9-inch baking dish with cooking spray.
- Bring water and 4 tablespoons butter to a boil in a medium saucepan over medium heat. Add stuffing mix and stir to combine. Remove saucepan from heat, cover, and let sit until water is absorbed, about 5 minutes. Fluff stuffing with a fork.
- Meanwhile, melt remaining 1 tablespoon butter in a small skillet over medium heat. Add onions, cook and stir until softened, about 5-10 minutes.
- In a medium bowl, mix both condensed soups with sour cream until well combined.
- Spread shredded chicken in the bottom of the prepared baking dish. Layer cooked onions over chicken and season with salt and pepper.
- Top with soup mixture and spread stuffing evenly over top.
- Bake in preheated oven until filling is bubbly and topping is golden brown, about 45-55 minutes.
