Everything Bagel Breakfast Casserole

This casserole will keep you full all morning. It is packed with flavorful everything bagels, crispy bacon, cream cheese, and a creamy egg custard. This easy bagel breakfast casserole can be made the night before. It is perfect for special occasions or easy breakfasts to serve to house guests.

  • Large mixing bowl

Ingredients

  • 6 Everything Bagels
  • 1/2 pound bacon, cooked
  • 1 (8oz) package cream cheese
  • 2 cups grated cheddar cheese
  • 8 eggs
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1 tablespoon chopped chives, plus more for garnish
  • 1 teaspoon dry mustard
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • Everything bagel seasoning (optional)

Instructions

  • Cut bagels into bite-sized chunks, and put them in a 9x13 buttered casserole dish.
  • Cut the cream cheese into chunks and distribute them all over the top of the bagels.
  • Sprinkle the grated cheese and cooked bacon on top. Set aside.
  • In a large bowl, whisk the eggs, milk, cream, chives, dry mustard, cayenne, and salt until well combined.
  • Pour egg mixture evenly over layers.
  • Cover the dish with foil and refrigerate for several hours or overnight.
  • When ready to bake, preheat oven to 350°F.
  • Bake, covered, for 45 minutes. Remove the foil and continue baking for 15-20 minutes or until the top is golden brown.
  • Cool for 15 minutes before serving.
  • If desired, sprinkle with extra bacon, chives, and everything bagel seasoning before serving.

1. Try different bagel flavors such as onion or use flavored cream cheese.
