Equipment

  • Baking Sheet
  • Parchment paper
  • Medium saucepan

Ingredients

  • 4 12-inch flour tortillas
  • 6 slices Provolone cheese (about 7.5 ounces)
  • 12 ounces thin sliced deli roast beef
  • 1 cup French fried onions
  • 1 tablespoon olive oil
  • 1 can (10.5 oz) beef consommé
  • ½ cup water
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder

Instructions

Assembling the Roll Ups

  • Preheat oven to 425 °F. Line a large baking sheet with parchment paper and set aside.
  • Lay the 4 tortillas on a counter or workspace. Tear the Provolone into smaller pieces and distribute evenly over each of the tortillas. Distribute the roast beef evenly over the cheese. Then sprinkle ¼ cup French friend onions over the beef on each tortilla.
  • Working with one tortilla at a time, fold the sides of the tortillas in, then tightly roll the tortilla into a roll. Brush a little of the olive oil on the edge to help seal it. Then place seam side down on the prepared baking sheet. Repeat with the remaining tortillas.
  • Brush the remining olive oil over the tops of the rollups.
  • Bake in the preheated oven for about 10 minutes, or until the rollups are browned.
  • While baking, combine the remaining ingredients in a medium saucepan over medium heat. Cook until warmed through.
  • To serve, cut the rollups in half and serve with the warm au jus for dipping.
