French Toast Muffins

An easy way to enjoy the flavors of French Toast, these muffins are made quickly with store-bought cinnamon bread and topped with a sweet powdered sugar glaze.

Equipment

  • Standard 12-cup muffin pan
  • Nonstick cooking spray
  • Large mixing bowl
  • Small mixing bowl

Ingredients

  • 4 large eggs
  • 5 tablespoons milk, divided
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 8 sliced store-bought cinnamon bread
  • ½ cup powdered sugar

Instructions

  • Preheat oven to 350°F. Spray 8 cups of muffin pan generously with nonstick spray or line with muffin liners.
  • In a large bowl, whisk together the eggs, 4 tablespoons milk, sugar, cinnamon and vanilla.
  • Cut bread into bite-size cubes. Gently stir bread cubes into the egg mixture and coat all pieces.
  • Evenly divide the bread and egg mixture into the 8 prepared muffin cups.
  • Bake for 15-16 minutes or until golden brown. Remove from oven.
  • Meanwhile, in a small bowl, combine the powdered sugar with up to 1 tablespoon milk to form a smooth glaze. Pour the glaze over muffins and serve immediately.

Notes

These muffins are best served hot and immediately after removing them from the oven.
