- 1 (9-inch) frozen pie crust (or, make your own with Mom's Favorite Pie Crust recipe)
- 1 quart (4 cups) fresh strawberries, stems removed and cut in halves
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 cup cold water
- 1 (3-ounce) package strawberry-flavored gelatin
- 1 (8-ounce) container whipped topping, optional

Prepare and bake the frozen pie shell according to the package directions for a single-crust pie. Make sure to prick the crust with fork tines many times before baking. Let it cool completely.

In a 2-quart saucepan, whisk together the sugar and cornstarch, blending the cornstarch in completely. Add water and cook over medium heat, whisking continuously, until mixture thickens.

Remove from heat. Add gelatin and whisk until smooth. Let mixture cool to room temperature.

Arrange strawberries in the baked pie crust. Pour cooled gelatin mixture evenly over strawberries.

Refrigerate until set, about 3 hours. Just before serving, top pie with whipped topping, if desired. Cover and refrigerate any remaining pie.
