- 1 (9-inch) traditional frozen pie shell in an aluminum pan
- 1 quart fresh strawberries, stems removed and cut in halves
- 1 cup white sugar
- 2 tablespoons cornstarch
- 1 cup water
- 1 (3 ounce) package strawberry-flavored gelatin
- 1 tub whipped topping, optional
Prepare and bake the frozen pie shell according to the package directions for an empty-crust pie. Make sure to prick the crust with a fork many times before baking. Let it cool completely.
In a saucepan, whisk together the sugar and cornstarch, blending the cornstarch in completely. Add water and cook over medium heat, whisking continuously, until mixture thickens.
Remove from heat. Add gelatin mix and whisk until smooth. Let mixture cool to room temperature.
Place strawberries in the baked pie shell. Pour cooled gelatin mixture over strawberries.
