Ingredient List
For the pizzas:
  • 1 pound chicken breast
  • 1 package taco seasoning
  • 1 tablespoon olive oil
  • 4 mini naan bread
  • ½ cup refried black beans
  • ½ cup shredded cheese
  • Optional Toppings: Lettuce, diced tomato, cilantro, avocado, tortilla strips, lime wedges
Instructions
For the chicken
  • Marinate chicken in taco seasoning and olive oil.

  • Grill or cook chicken until cooked through, until the center of the chicken is at least 165°F.

  • Allow chicken to rest for 5 minutes before cutting into bite sized pieces.

For the pizzas
  • Heat oven to 350°F.

  • Place mini naan bread on prepared baking sheet.

  • Spread 2 tablespoons refried black beans over each piece of naan. Evenly distribute diced chicken over naan and sprinkle with shredded cheese.

  • Bake for 10 minutes or until cheese is melted.

  • Top with desired toppings.
