Ingredient List
For the breakfast pizzas:
  • 4 eggs
  • ¼ cup low-fat milk
  • Salt and pepper
  • Optional: diced bell peppers, spinach, mushrooms, tomatoes, etc.
  • 4 strips bacon (or substitute crumbled breakfast sausage or diced ham)
  • 4 mini naan bread (or pita bread)
  • 1/3 cup shredded cheese
Instructions
For the breakfast pizzas
  • Heat oven to 350°F.

  • Whisk together eggs, milk, salt and pepper. Scramble eggs in skillet with vegetables over medium heat.

  • Cook bacon and crumble into small pieces.

  • Place mini naan bread on prepared baking sheet.

  • Spoon scrambled eggs over naan, sprinkle with crumbled bacon and shredded cheese.

  • Bake for 10 minutes or until cheese is melted.
