Ingredient List
For the Filling:
  • ¼ cup granulated sugar
  • 1 tablespoon cornstarch
  • ¼ teaspoon ground cinnamon or nutmeg
  • 5 cups peeled, sliced, fresh peaches ( 5 – 6 large)
For the Topping:
  • ½ cup white whole wheat flour
  • ½ cup all-purpose flour
  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • ⅓ cup cold margarine or butter
  • 1 large egg, beaten
  • Vanilla ice cream, for serving (Optional)
Instructions
Prepare baking dish
  • Preheat oven to 375°F. Spray with nonstick spray a 11” x 7” x 2” baking dish.

For the filling
  • In large bowl, whisk sugar, cornstarch and cinnamon or nutmeg.

  • Add peaches; stir to coat.

  • Pour peaches and juices into baking dish.

For the Topping
  • In large bowl, whisk together whole wheat flour, all-purpose flour, sugar, baking powder and salt.

  • Cut in the margarine or butter until mixture resemble fine crumbs.

  • Stir in the egg and mix until combined and crumbly.

  • Sprinkle crumb topping evenly over peaches.

  • Bake 35 – 40 minutes, or until peaches are bubbling and topping is golden-brown.

  • Serve warm or cold, with ice cream, if desired.
