Peanut Butter Banana Waffles

Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • ¾ cup creamy peanut butter
  • ½ cup canola oil
  • 2 large eggs
  • 1 3/4 cups 2% milk
  • 1 cup mashed ripe banana (about 2 medium)
  • Optional: syrup for serving

Instructions

For the Waffles

  • In a medium bowl, combine the dry ingredients: flour, sugar, baking powder, and salt.
  • In a large bowl, gradually whisk together peanut butter and oil. Add eggs and milk; continue to whisk.
  • Add dry ingredients to wet ingredients and stir just until moistened. Stir in bananas.
  • Bake in preheated waffle iron according to manufacturer's instructions, until golden brown.
  • Serve hot with syrup, if desired.
