Peanut Butter Banana Waffles

Ingredients
- 1 3/4 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- ¼ teaspoon salt
- ¾ cup creamy peanut butter
- ½ cup canola oil
- 2 large eggs
- 1 3/4 cups 2% milk
- 1 cup mashed ripe banana (about 2 medium)
- Optional: syrup for serving
Instructions
For the Waffles
- In a medium bowl, combine the dry ingredients: flour, sugar, baking powder, and salt.
- In a large bowl, gradually whisk together peanut butter and oil. Add eggs and milk; continue to whisk.
- Add dry ingredients to wet ingredients and stir just until moistened. Stir in bananas.
- Bake in preheated waffle iron according to manufacturer's instructions, until golden brown.
- Serve hot with syrup, if desired.
