Ingredients

  • 16 ounces fully cooked, shredded pork
  • ½ teaspoon minced garlic
  • ½ cup BBQ sauce
  • 8 slices Texas toast bread
  • 8 slices Colby-Monterey jack cheese
  • ¼ cup mayonnaise

Instructions

Making the Pulled Pork Grilled Cheese

  • Heat shredded pork and minced garlic in a small saucepan over medium-low heat, just until heated through.
  • Heat skillet or griddle over medium heat.
  • To assemble sandwiches, spread outsides of bread with mayonnaise. Layer one slice of bread, one slice of cheese, 4 ounces pork, drizzle 2 tablespoons BBQ sauce, another slice of cheese, and top with remaining slice of bread.
  • Toast sandwiches in prepared skillet or on griddle until golden brown and cheese is melted, about 2-3 minutes per side.
  • Serve immediately.
