Ingredients
- 16 ounces fully cooked, shredded pork
- ½ teaspoon minced garlic
- ½ cup BBQ sauce
- 8 slices Texas toast bread
- 8 slices Colby-Monterey jack cheese
- ¼ cup mayonnaise
Instructions
Making the Pulled Pork Grilled Cheese
- Heat shredded pork and minced garlic in a small saucepan over medium-low heat, just until heated through.
- Heat skillet or griddle over medium heat.
- To assemble sandwiches, spread outsides of bread with mayonnaise. Layer one slice of bread, one slice of cheese, 4 ounces pork, drizzle 2 tablespoons BBQ sauce, another slice of cheese, and top with remaining slice of bread.
- Toast sandwiches in prepared skillet or on griddle until golden brown and cheese is melted, about 2-3 minutes per side.
- Serve immediately.
