- 3 large eggs
- 1/3 cup solid packed pumpkin puree
- 2 tablespoon light brown sugar
- 1 ½ teaspoons pumpkin pie spice
- ½ cup whole milk
- 8 slices thick-cut white bread
- Optional toppings: butter, maple syrup, whipped cream, chopped pecans

Preheat griddle on medium heat.

In a shallow mixing bowl, whisk together the eggs, pumpkin puree, brown sugar, pumpkin pie spice, and milk. Whisk very thoroughly.

Dip a slice of bread in the egg mixture, coating both sides and allowing the excess mixture to drip off.

Place on hot griddle and cook for about 3 minutes on each side, or until deep golden brown. Repeat with the remaining bread.

Serve hot with desired toppings.
