Ingredients

  • 1 cup all-purpose flour
  • ½ cup unsalted butter, softened
  • ¼ cup powdered sugar

Instructions

Making the Simple Lemon Squares

  • Preheat oven to 350°F. 
  • Mix 1 cup flour, butter, and powdered sugar in a medium bowl with a pastry cutter or wooden spoon.
  • Using your hands or the back of a spoon, press mixture evenly into the bottom and about ½-inch up the sides of an ungreased 8x8 pan.
  • Bake this for 20 minutes.
  • Meanwhile, beat the remaining ingredients in a medium bowl on medium speed until light and fluffy. Pour over hot crust.
  • Bake for 25-30 minutes until golden brown and no indentation remains when touched lightly with a finger.
  • Sprinkle with more powdered sugar, then let stand until cool. Cut into 2-inch squares.
  • Serve room-temperature or chilled.
