- 1 cup all-purpose flour
- ½ cup unsalted butter, softened
- ¼ cup powdered sugar
- 1 cup sugar
- ¼ cup lemon juice
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 2 tablespoons all-purpose flour
- 2 large eggs
- Additional powdered sugar, for dusting

Preheat oven to 350°F.

Mix 1 cup flour, butter, and powdered sugar in a medium bowl with a pastry cutter or wooden spoon.

Using your hands or the back of a spoon, press mixture evenly into the bottom and about ½-inch up the sides of an ungreased 8×8 pan.

Bake this for 20 minutes.

Meanwhile, beat the remaining ingredients in a medium bowl on medium speed until light and fluffy. Pour over hot crust.

Bake for 25-30 minutes until golden brown and no indentation remains when touched lightly with a finger.

Sprinkle with more powdered sugar, then let stand until cool. Cut into 2-inch squares.

Serve room-temperature or chilled.
