  • Nonstick cooking spray
  • Small bowl
  • Large skillet

Ingredients

  • 1 can (10 ounces) Green Enchilada sauce
  • ¾ cup Salsa Verde
  • 1 pound lean ground beef
  • ½ teaspoon Cumin
  • ½ teaspoon Chili Powder
  • 4 10-inch Flour tortillas
  • 1.5 cups shredded Cheddar cheese, divided

Instructions

Making the Smothered Burritos

  • Preheat oven to 375°F. Spray 11x7 baking dish and set aside.
  • In a small bowl, mix enchilada sauce and salsa verde. Set aside.
  • In a large skillet, cook beef over medium heat until no longer pink, 8-10 minutes, breaking into crumbles; drain. Stir in ½ cup sauce mixture, cumin and chili powder.
  • Spoon 2/3 cup beef mixture across center of each tortilla. Top with 3 tablespoons cheese. Fold bottom and side of tortilla over filling and roll up. Place in prepared baking dish.
  • Pour remaining sauce mixture over top; sprinkle with remaining cheese.
  • Bake, uncovered, until cheese is melted, 10-15 minutes. Serve.
