Ingredients

  • 6 cups whole wheat flour
  • 3 cups all-purpose flour
  • ½ cup brown sugar
  • ½ cup wheat germ
  • 3 tablespoons baking powder
  • 2 teaspoons salt

To make the pancakes:

  • 1 cup pancake mix
  • â…” cup milk
  • 1 egg
  • 1 tablespoon vegetable oil

Instructions

  • Blend together all ingredients and store in an air tight container.
  • When ready to use the pancake mix, preheat electric griddle to 325°F or a nonstick skillet over medium-low.

To make the pancakes:

  • In a large bowl, whisk together (~6 pancakes) pancake mix, milk egg, vegetable oil.
  • Using a ¼ cup measuring cup, scoop the batter onto greased griddle.
  • Cook until bubbles appear and bottoms are light brown. Flip pancakes and cook until the second side is golden brown.
  • Serve with butter, syrup, and mixed berries if desired.
