Apple Cinnamon Breakfast Cookies
These whole wheat cookies are hearty, healthy and perfect for breakfast on those busy mornings.

- 2 Baking sheets
- Parchment paper or silicone backing mats
- Large mixing bowl
Ingredients
- 1¼ cups whole wheat flour
- 1 cup old-fashioned rolled oats
- 1½ tsp ground cinnamon
- 1 tsp baking power
- ¼ tsp salt
- 1 large egg
- ¼ cup unsalted butter, softened and cubed
- ½ cup honey
- ½ cup unsweetened applesauce
- 1 tsp vanilla extract
- ½ chopped apple
- ½ cup chopped pecans, optional
Instructions
- Preheat oven to 350 °F. Line two baking sheets with silicone baking mats or parchment paper and set aside.
- In a large bowl, mix the flour, oats, cinnamon, baking powder, and salt.
- Make a well in the center and add the egg, butter, honey, applesauce, and vanilla. Mix wet ingredients inside the well and then mix into the dry ingredients until just combined.
- Fold in the chopped apple and pecans.
- Spoon dough onto prepared baking sheets in two rows, 8 cookies per pan.
- Bake for 18-22 minutes, until golden brown. Enjoy warm or allow to cool completely.
- Store in an air-tight container at room temperature or in the refrigerator.
