Bread Machine English Muffins

How to Make Bread Machine English Muffins

Begin by adding all ingredients, minus cornmeal, to the bread machine in this order:

  • Whole milk
  • Unsalted butter
  • Egg
  • Salt
  • Granulated sugar
  • All-purpose flour
  • Active dry yeast

Start your machine on the dough cycle. If the dough seems too sticky in the first couple minutes, add more flour a little at a time until it gathers around the mixing paddle.

While your bread machine is working, sprinkle cornmeal over your work area. Once the cycle is finished, punch the dough down and remove it from the machine. Pat the dough into a ⅜-inch-thick rectangle on the prepared work area. Turn the dough so each side is lightly coated with cornmeal.

Using a 3 ½-inch round cutter, cut into 12 circles. Gather the dough trimmings and re-pat until all dough is used.

After cutting out the rounds, place them on a baking sheet, cover and let rise for 15-20 minutes until they have almost doubled in size.

When the rounds are near the end of their rising time, begin preheating a dry cast iron skillet or griddle over low heat for around 5-6 minutes.

Once preheated, cook the muffins for about 7-9 minutes on each side, until golden brown and slightly deflating while cooking on the second side.
