One-Pan Broccoli Cheddar Orzo

Ingredients
- 3 tablespoons unsalted butter
- 1 medium yellow onion, diced
- ½ teaspoon salt
- ½ teaspoon black pepper
- 3 cloves garlic, finely chopped
- 1 pound fresh broccoli, chopped
- 1 pound orzo
- 4 cups low-sodium chicken broth
- ¾ cup whole milk
- 8 ounce block sharp cheddar cheese, shredded
Instructions
- In a large skillet over medium heat, melt butter. Add onion, season with salt, pepper, and garlic. Cook, stirring occasionally, until softened, about 7 minutes.
- Add broccoli and cook, stirring, until the florets are crisp and bright green, about 3-5 minutes.
- Add orzo, broth, and milk. Gently stir, then spread mixture into an even layer covering the bottom of the pan.
- Reduce heat, cover and simmer on low for 5 minutes. Stir and continue cooking until orzo is al dente but cooked through.
- Top with shredded cheese. Cover and cook for an additional 1 minute until the cheese is melted.
- Gently stir in cheese and serve.
Notes
Try adding chicken or another protein to make it a complete meal.
