One-Pan Broccoli Cheddar Orzo

  • 12-inch skillet with lid

Ingredients

  • 3 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 3 cloves garlic, finely chopped
  • 1 pound fresh broccoli, chopped
  • 1 pound orzo
  • 4 cups low-sodium chicken broth
  • ¾ cup whole milk
  • 8 ounce block sharp cheddar cheese, shredded

Instructions

  • In a large skillet over medium heat, melt butter. Add onion, season with salt, pepper, and garlic. Cook, stirring occasionally, until softened, about 7 minutes.
  • Add broccoli and cook, stirring, until the florets are crisp and bright green, about 3-5 minutes.
  • Add orzo, broth, and milk. Gently stir, then spread mixture into an even layer covering the bottom of the pan.
  • Reduce heat, cover and simmer on low for 5 minutes. Stir and continue cooking until orzo is al dente but cooked through.
  • Top with shredded cheese. Cover and cook for an additional 1 minute until the cheese is melted.
  • Gently stir in cheese and serve.

Notes

Try adding chicken or another protein to make it a complete meal.
