Chocolate Crinkle Cookies

Equipment

  • Electric stand mixer with bowl
  • Large cookie sheet
  • Silicone baking mat
  • 2-inch cookie scoop

Ingredients

  • 2 cups granulated sugar
  • ¾ cup vegetable oil
  • ¾ cup unsweetened baking cocoa powder
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/3 cup all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup powdered sugar for rolling

Instructions

Baking the Cookies

  • In an electric stand mixer bowl, combine granulated sugar and oil on medium speed. Add cocoa powder; mix until well blended, scraping sides of bowl as necessary.
  • Add eggs and vanilla and mix well.
  • Add flour, baking powder and salt and mix well.
  • Cover and refrigerate dough for at least 3 hours.
  • Heat oven to 350o. Line large cookie sheet with silicone baking mat.
  • Using 2-inch cookie scoop, drop cookie dough balls in powdered sugar and roll to coat. Place about 2 inches apart on prepared cookie sheet.
  • Bake 11-13 minutes or until edges are set and tops are crackled. Cool slightly; remove from cookie sheet to wire rack and cool completely.
