- 2 cups granulated sugar
- ¾ cup vegetable oil
- ¾ cup unsweetened baking cocoa powder
- 4 large eggs
- 2 teaspoons vanilla extract
- 2 1/3 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup powdered sugar for rolling

In an electric stand mixer bowl, combine granulated sugar and oil on medium speed. Add cocoa powder; mix until well blended, scraping sides of bowl as necessary.

Add eggs and vanilla and mix well.

Add flour, baking powder and salt and mix well.

Cover and refrigerate dough for at least 3 hours.

Heat oven to 350o. Line large cookie sheet with silicone baking mat.

Using 2-inch cookie scoop, drop cookie dough balls in powdered sugar and roll to coat. Place about 2 inches apart on prepared cookie sheet.

Bake 11-13 minutes or until edges are set and tops are crackled. Cool slightly; remove from cookie sheet to wire rack and cool completely.
