Ingredients
- 4 eggs
- ¼ cup low-fat milk
- Salt and pepper
- Optional: diced bell peppers, spinach, mushrooms, tomatoes, etc.
- 4 strips bacon (or substitute crumbled breakfast sausage or diced ham)
- 4 mini naan bread (or pita bread)
- 1/3 cup shredded cheese
Instructions
For the breakfast pizzas
- Heat oven to 350°F.
- Whisk together eggs, milk, salt and pepper. Scramble eggs in skillet with vegetables over medium heat.
- Cook bacon and crumble into small pieces.
- Place mini naan bread on prepared baking sheet.
- Spoon scrambled eggs over naan, sprinkle with crumbled bacon and shredded cheese.
- Bake for 10 minutes or until cheese is melted.
