  • Large baking sheet

Ingredients

  • 3 tbsp extra-virgin olive oil
  • 1 small onion, halved and thinly sliced
  • 2 medium pepperoncini pepper, thinly sliced
  • 1 clove garlic, minced
  • 1 lbs shaved or very thinly sliced beef
  • ¼ cup chopped fresh parsley
  • ¾ tsp salt
  • ½ tsp black pepper
  • 4 whole-wheat pocket pitas
  • 2 cups shredded Italian blend cheese
  • ½ cup pickled, sliced banana peppers

Instructions

  • Preheat the broiler.
  • Heat the olive oil in a large nonstick skillet over medium-high heat. Add the onion and the pepperoncini peppers. Cook about 5 minutes, stirring occasionally, until slightly softened.
  • Add the garlic and beef and cook about 3 minutes more, until the beef begins to brown.
  • Add the parsley, salt, and pepper, and cook 1 more minute.
  • Meanwhile, line a large baking sheet with aluminum foil.
  • Arrange the pitas on the prepared baking sheet and sprinkle each with about ¼ cup cheese. Top evenly with the beef mixture and the remaining 1 cup cheese.
  • Broil the pizzas until the cheese melts, about 2 minutes. Top with pickled banana pepper slices and cut each pizza into quarters. Serve warm.
