Sausage, Egg and Cheese Breakfast Roll-Ups

Equipment

  • Small bowl
  • Medium nonstick skillet
  • Large baking sheet
  • Parchment paper
  • Pastry brush

Ingredients

  • 5 large eggs
  • 1 can (8 ounces) refrigerated crescent dinner rolls
  • 8 sausage links, cooked
  • 4 slices American cheese
  • Salt and pepper, to taste

Instructions

Assembling the Breakfast Roll Ups

  • Preheat oven to 350°F. Line a large baking sheet with parchment paper.
  • In a small bowl, beat eggs. Reserve 2 tablespoons beaten egg for brushing on tops of crescent rolls. Scramble remaining eggs in medium nonstick skillet.
  • Unroll dough onto work surface and separate into 8 triangles.
  • Cut cheese slices in half and place one half on each triangle. Top each with a spoonful of scrambled eggs and one sausage link. Loosely roll up triangles as directed on can. Place on prepared baking sheet.
  • Brush reserved egg on top of each crescent. Sprinkle lightly with salt and pepper.
  • Bake 15 to 18 minutes, or until golden brown.  Serve immediately.
