Skillet Taco Mac Recipe

- 1 pound lean ground beef
- 1/2 yellow onion, diced
- 3/4 cup salsa
- 2 tablespoons taco seasoning (1 packet taco seasoning)
- 2 cups skim milk
- 1.5 cups whole grain elbow macaroni
- 1 tablespoon cornstarch
- 1 cup hot water
- 1 cup shredded sharp cheddar cheese
- Optional: crushed tortilla chips, guacamole, salsa for serving
For the taco mac
Brown hamburger with diced onion in large skillet. Drain excess grease from skillet.
Place skillet back on stove. Add salsa, taco seasoning, milk and pasta.
Mix hot water and cornstarch and whisk until smooth, add mixture to skillet.
Stir to combine ingredients in skillet and bring to a boil.
Reduce heat, place lid on skillet and simmer until pasta is al dente, stirring a few times.
Turn off heat and add cheese. Stir until melted.
Serve with crushed tortilla chips, guacamole and/or salsa.
