Skillet Taco Mac Recipe

Ingredients

  • 1 pound lean ground beef
  • 1/2 yellow onion, diced
  • 3/4 cup salsa
  • 2 tablespoons taco seasoning (1 packet taco seasoning)
  • 2 cups skim milk
  • 1.5 cups whole grain elbow macaroni
  • 1 tablespoon cornstarch
  • 1 cup hot water
  • 1 cup shredded sharp cheddar cheese
  • Optional: crushed tortilla chips, guacamole, salsa for serving

Instructions

For the taco mac

  • Brown hamburger with diced onion in large skillet. Drain excess grease from skillet.
  • Place skillet back on stove. Add salsa, taco seasoning, milk and pasta.
  • Mix hot water and cornstarch and whisk until smooth, add mixture to skillet.
  • Stir to combine ingredients in skillet and bring to a boil.
  • Reduce heat, place lid on skillet and simmer until pasta is al dente, stirring a few times.
  • Turn off heat and add cheese. Stir until melted.
  • Serve with crushed tortilla chips, guacamole and/or salsa.
