Skillet Taco Mac Recipe

- Large Skillet
Ingredients
- 1 pound lean ground beef
- 1/2 yellow onion, diced
- 3/4 cup salsa
- 2 tablespoons taco seasoning (1 packet taco seasoning)
- 2 cups skim milk
- 1.5 cups whole grain elbow macaroni
- 1 tablespoon cornstarch
- 1 cup hot water
- 1 cup shredded sharp cheddar cheese
- Optional: crushed tortilla chips, guacamole, salsa for serving
Instructions
For the taco mac
- Brown hamburger with diced onion in large skillet. Drain excess grease from skillet.
- Place skillet back on stove. Add salsa, taco seasoning, milk and pasta.
- Mix hot water and cornstarch and whisk until smooth, add mixture to skillet.
- Stir to combine ingredients in skillet and bring to a boil.
- Reduce heat, place lid on skillet and simmer until pasta is al dente, stirring a few times.
- Turn off heat and add cheese. Stir until melted.
- Serve with crushed tortilla chips, guacamole and/or salsa.
