Sweet Potato and Black Bean Quesadillas

Black beans are inexpensive and a great source of protein and fiber! The whole wheat tortillas are also a good source of fiber! This quesadilla can easily be customized by adding additional vegetables or other protein sources such as chicken, pork, or beef!

Ingredients

  • 2 whole grain tortillas
  • ½ cup roasted sweet potatoes (diced)
  • ¼ cup black beans
  • 1/3 cup shredded cheese
  • 2 teaspoons butter

Instructions

Quesadillas

  • Heat skillet over medium-high heat.
  • Spread butter over one side of each whole wheat tortilla.
  • Place tortilla butter side down in heated skillet. Sprinkle sweet potatoes, black beans and shredded cheese evenly over tortilla. Place second tortilla over mixture butter side up.
  • Cook in skillet until golden brown. Flip to other side and cook until golden brown.
  • Remove quesadilla from skillet and cut into six slices. Serve with a side of guacamole and salsa. Add fresh fruit for a simple and delicious meal!
