- 2 whole grain tortillas
- ½ cup roasted sweet potatoes (diced)
- ¼ cup black beans
- 1/3 cup shredded cheese
- 2 teaspoons butter
Heat skillet over medium-high heat.
Spread butter over one side of each whole wheat tortilla.
Place tortilla butter side down in heated skillet. Sprinkle sweet potatoes, black beans and shredded cheese evenly over tortilla. Place second tortilla over mixture butter side up.
Cook in skillet until golden brown. Flip to other side and cook until golden brown.
Remove quesadilla from skillet and cut into six slices. Serve with a side of guacamole and salsa. Add fresh fruit for a simple and delicious meal!
