- 3 cups grilled chicken, diced
- 1-1/2 cups frozen corn, thawed
- 1 red pepper, chopped
- 1 green pepper, chopped
- 1 bunch green onions, chopped
- 1 jalapeño, diced
- 1/2 cup cilantro, minced
- 1 can black beans, drained
- 3 Tablespoons lime juice
- 3 Tablespoons olive oil
- 1 Tablespoon honey
- 1 teaspoon cumin
- 1 teaspoon chili powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 12 whole wheat tortillas
- Shredded cheese
Combine chicken salad ingredients in large bowl.
Whisk dressing ingredients in small bowl until well blended.
Pour dressing ingredients over chicken salad and mix well.
To prepare wrap, add approximately ½ cup of salad mixture, sprinkle of shredded cheese and diced avocado to the center of a whole wheat tortilla. Fold tightly to form a burrito shape.
Per Serving (1 wrap): 309 calories, 99 calories from fat, 11g fat, 3.8 saturated fat, 36mg cholesterol, 729mg sodium, 34g total carbohydrates, 6g dietary fiber, 5g sugars, 20 protein.
