Ingredient List
For the chicken salad:
  • 3 cups grilled chicken, diced
  • 1-1/2 cups frozen corn, thawed
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 1 bunch green onions, chopped
  • 1 jalapeño, diced
  • 1/2 cup cilantro, minced
  • 1 can black beans, drained
For the dressing:
  • 3 Tablespoons lime juice
  • 3 Tablespoons olive oil
  • 1 Tablespoon honey
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
For the wrap:
  • 12 whole wheat tortillas
  • Shredded cheese
  • Avocado
Instructions
For the wrap
  • Combine chicken salad ingredients in large bowl.

  • Whisk dressing ingredients in small bowl until well blended.

  • Pour dressing ingredients over chicken salad and mix well.

  • To prepare wrap, add approximately ½ cup of salad mixture, sprinkle of shredded cheese and diced avocado to the center of a whole wheat tortilla. Fold tightly to form a burrito shape.
