Chicken and penne pasta is a simple dish with endless flavor profiles available with small tweaks of the ingredients.
Ingredient List
For the Pasta:
  • 1 pound penne noodles
  • 1 pound chicken, grilled and cubed
For the Sauce:
  • 2 tablespoon butter
  • 1/4 cup flour
  • 1 cup chicken broth
  • 1 cup milk
  • 1 teaspoon chicken bouillon
  • 1 1/2 cups mozzarella cheese
  • 1. Preheat oven to 350°F.

  • 2. Boil penne noodles according to package, until “al dente.”

  • 3. Prepare sauce: In skillet melt butter, whisk in flour and slowly pour in milk and chicken broth. Stir in chicken bouillon. Bring to a boil, stirring constantly. Remove from heat.

  • 4. Drain noodles; add cooked chicken and sauce to the pan, along with 1 cup of mozzarella cheese stir until combined.

  • 5. Pour into a 13 x 9-inch baking dish. Bake for 15 minutes.

  • 6. Top with remaining 1/2 cup cheese.

  • 7. Bake for an additional 5 minutes or until cheese is melted and starting to turn golden brown.
